Now more than 30 years later, chai lattes continue to be a popular coffee shop menu item across the globe.&nbsp;&nbsp;<\/p>\n\n\n\n<p>\u201c<a href=\"https:\/\/www.foodandwine.com\/tea\/chai-tea\/what-is-chai-how-to-make-chai\">Chai<\/a>\u201d means <em>tea<\/em> in Hindi, and is traditionally <a href=\"https:\/\/freshcup.com\/reflecting-on-the-evolution-of-chai-in-coffeeshops\/\">prepared with milk, black tea, sugar, and a combination of spices<\/a>\u2014the most common spices include cinnamon, ginger, cardamom, and clove. In the United States, when we order chai tea\u2014which, as you now know, translates to \u201ctea tea\u201d\u2014we are referring to the flavors reminiscent of traditional tea in India.&nbsp;<\/p>\n\n\n\n<p><a href=\"https:\/\/www.statista.com\/statistics\/326384\/global-tea-beverage-market-size\/\">Consumer demand for tea is increasing<\/a>, and chai\u2019s flavor profile plays well in signature drinks and baked goods, adding complementary warm flavors to almost any flavor you pair it with. We spoke with coffee shop owners and ingredient distributors about the increasing demand for chai and how they\u2019re using it creatively on their menus.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Customers Want More Chai<\/strong><\/h2>\n\n\n\n<p>Tea-based beverages welcome non-coffee drinkers to coffee-dominated spaces with open arms, and research indicates that people are looking to their local cafes for more tea options. By 2025, <a href=\"https:\/\/www.statista.com\/outlook\/cmo\/hot-drinks\/tea\/united-states\">83% of spending and 15% of tea drinking<\/a> in the United States will be attributable to out-of-home consumption\u2014meaning more customers are going out to purchase tea than ever before. As of 2022, at-home tea consumption sales amounted to $2.52 billion, while out-of-home sales reached $10.87 billion. Recent reports also discovered that Millennials and Gen Z are <a href=\"https:\/\/www.worldteanews.com\/issues-trends\/state-us-tea-industry-review-2022-and-look-forward-2023\">drinking more tea-based beverages\u2014and will continue so<\/a> through 2023.&nbsp;<\/p>\n\n\n\n<blockquote class=\"wp-block-quote\">\n<p>As the global tea market approaches <a href=\"https:\/\/www.statista.com\/statistics\/326384\/global-tea-beverage-market-size\/\">an expected $266.7 billion in revenue by 2025<\/a> and consumer preferences <a href=\"https:\/\/www.mckinsey.com\/industries\/consumer-packaged-goods\/our-insights\/hungry-and-confused-the-winding-road-to-conscious-eating\">shift toward healthy options<\/a>, more consumers are opting for tea-based beverages like chai.&nbsp;<\/p>\n<\/blockquote>\n\n\n\n<p>After noticing a growing demand for chai tea, Manish Shah, founder of <a href=\"https:\/\/www.mayateawholesale.com\/?utm_source=fresh-cup&amp;utm_medium=sponsored-content&amp;utm_campaign=2023-chai-trends\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">Maya Tea<\/a>, spent an entire year developing a chai recipe that combines innovation with authentic sweet and spice flavors. Chai can be made using loose-leaf tea, tea bags, or a concentrate, but Shah focused on developing a <a href=\"https:\/\/www.mayateawholesale.com\/pages\/chai?utm_source=fresh-cup&amp;utm_medium=sponsored-content&amp;utm_campaign=2023-chai-trends\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">concentrate<\/a>, which is popular among coffee and tea shops because it\u2019s easy to use and to guarantee consistency.&nbsp;<\/p>\n\n\n\n<p>\u201cWith chai concentrate\u2026 it\u2019s a liquid concentrate that you just add milk to. It\u2019s already sweetened, already has the spices, and already has everything in it. You just need to add milk to get the cup that you\u2019re looking for,\u201d says Shah in an episode of his podcast, <a href=\"https:\/\/open.spotify.com\/episode\/2tdkjzLFE0VIiVApgvIET4?si=0077511ebff94c2e\" target=\"_blank\" rel=\"noreferrer noopener\">Steeping Around<\/a>. \u201cI wanted to create the most authentic representation we could, but still make it easier for caf\u00e9s to use and lend itself to American palates.\u201d<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-large\"><img decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/ChaiLatteIced_001-1-1024x683.jpg\" alt=\"\" class=\"wp-image-34909\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/ChaiLatteIced_001-1-1024x683.jpg 1024w, https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/ChaiLatteIced_001-1-500x333.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/ChaiLatteIced_001-1-768x512.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/ChaiLatteIced_001-1-400x267.jpg 400w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><figcaption class=\"wp-element-caption\">Iced chai latte<\/figcaption><\/figure>\n\n\n\n<p>Shah explains that the availability of chai in most coffee shops has cemented the product in the minds and purchasing habits of Millennials and Gen Z\u2014but now, they&#8217;re looking for products with better ingredients. \u201cTheir tastes have matured, and their demand for higher quality has pushed chai makers to use higher quality ingredients,\u201d says Shah.&nbsp;<\/p>\n\n\n\n<p>Josh Dann, the Pacific Northwest Sales Director for <a href=\"https:\/\/petesmilkdelivery.com\/\">Pete\u2019s Milk Delivery<\/a>, a distributor service offering Maya Tea products, notes the significant growth of chai over the last several years. \u201cWe\u2019ve had at least four new companies reach out to see if I would consider distributing their chai. Chai is definitely growing in the marketplace.\u201d As the global tea market approaches <a href=\"https:\/\/www.statista.com\/statistics\/326384\/global-tea-beverage-market-size\/\">an expected $266.7 billion in revenue by 2025<\/a> and consumer preferences <a href=\"https:\/\/www.mckinsey.com\/industries\/consumer-packaged-goods\/our-insights\/hungry-and-confused-the-winding-road-to-conscious-eating\">shift toward healthy options<\/a>, more consumers are opting for tea-based beverages like chai.&nbsp;<\/p>\n\n\n\n<p>\u201cWe sell a large volume of regular chai,\u201d says Brock Arehart, owner of <a href=\"https:\/\/www.kittskitchen.com\/\">Kitt\u2019s Kitchen &amp; Coffee<\/a> and <a href=\"https:\/\/calicocoffee.co\/\">Calico Coffee Company<\/a> in Kearney, Nebraska. \u201cWe have a lot of customers that come [to the coffee shop] just for chai tea.\u201d&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Beyond the Chai Latte<\/h2>\n\n\n\n<p>Coffee shop owners like Margaret Hadley of <a href=\"https:\/\/www.lebuzzcaffe.com\/\">Le Buzz Caff\u00e9<\/a> in Tucson, Arizona, use chai to enhance and enrich seasonal drink specials. \u201cLast fall, we did an Apple Butter Chai Latte,\u201d says Hadley. \u201cTo keep it special, we confine it to November and December, but it did very well.\u201d<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-large\"><img decoding=\"async\" width=\"854\" height=\"1024\" src=\"https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/Apple-Butter-Chai-Latte-Le-Buzz-Caffe-854x1024.jpeg\" alt=\"\" class=\"wp-image-34906\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/Apple-Butter-Chai-Latte-Le-Buzz-Caffe-854x1024.jpeg 854w, https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/Apple-Butter-Chai-Latte-Le-Buzz-Caffe-417x500.jpeg 417w, https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/Apple-Butter-Chai-Latte-Le-Buzz-Caffe-768x920.jpeg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/Apple-Butter-Chai-Latte-Le-Buzz-Caffe-400x479.jpeg 400w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><figcaption class=\"wp-element-caption\">Apple butter chai latte<\/figcaption><\/figure>\n\n\n\n<p>With the wealth of warming spices available in a chai concentrate, coffee shop owners and baristas can let their imaginations run wild and create delicious flavor combinations for signature and seasonal beverages.<\/p>\n\n\n\n<p>In addition to the standard chai latte or dirty chai for those who want the added kick of espresso, Le Buzz Caffe\u2019s drink menu also includes inventive beverages such as the Frozen Chai, made with chai concentrate, water, vanilla powder, and ice. \u201cWe\u2019re even seeing our wholesale customers mix chai concentrate into cold brew offerings as an ingredient,\u201d says Dann. Using a concentrate instead of a powder or loose-leaf option allows baristas to easily integrate chai flavors into cold beverages.<\/p>\n\n\n\n<p>On his podcast, Shah explains that most chai concentrates on the market use a 1:1 ratio of milk to concentrate for a chai latte. Maya Tea\u2019s concentrate, however, is an 11:1 milk-to-concentrate ratio. \u201cI\u2019ve done this deliberately to make a thick, creamy, heavy chai that\u2019s more authentic,\u201d says Shah. \u201cThe one-ounce shots are really concentrated and really flavorful.\u201d According to the Maya Tea website, the flavors and recipe of the concentrate are \u201creminiscent of the chai prepared by their mother in youth.\u201d<\/p>\n\n\n\n<p>In a separate conversation, Shah mentions that customers can detect unauthentic chai by the lack of balance. \u201cWhen we make the masala spice mix, we try to create a balance where you can\u2019t detect the individual notes. There\u2019s a dance between the sweetness and spicy that\u2019s magical, where nothing stands alone. The whole is more than the sum of its parts.\u201d&nbsp;<\/p>\n\n\n\n<p>Maya Chai&#8217;s super concentrated recipe means cafe owners can easily experiment and add chai to new recipes. \u201cAs an 11:1 concentration, our chais are very flexible,\u201d says Shah. When Hadley wants to add a bit of heat or tone down the sweetness of her signature drinks, she uses <a href=\"https:\/\/www.mayateawholesale.com\/pages\/chai?utm_source=fresh-cup&amp;utm_medium=sponsored-content&amp;utm_campaign=2023-chai-trends\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">Maya Tea\u2019s Devi Chai<\/a>, which boasts more \u201cfueled up fiery notes\u201d and a spicier beverage. \u201cIf it needs more flavor, I\u2019m prone to using the Devi Chai, which is a little spicier and hotter.\u201d<\/p>\n\n\n\n<p>At Kitt\u2019s Kitchen &amp; Coffee, chai finds its way on the menu on its own and in signature drinks, including a <a href=\"https:\/\/www.facebook.com\/kittskitchenandcoffee\/photos\/a.1115662755234340\/2433244823476120\/\">Pumpkin Pie Chai Latte<\/a>. \u201cOur menu pays homage to a lot of different things around the world,\u201d Arehart explains. \u201cWe love the stories behind those menu items and ingredients, and the same is true with Maya Tea because there is a great story behind its origin. Manish brought a lot of his tradition and culture into the chai concentrate, and that\u2019s what we focus on.\u201d<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Spice Up the Food Menu<\/h2>\n\n\n\n<p>Beyond signature drinks, chai&#8217;s warm and spicy flavors extend to the kitchen. Right now, we\u2019re working on a vanilla chai shortbread cookie and a chai spice cookie. There are also a couple of scones we\u2019ve been working on, like chai pear and maple chai oat.\u201d<\/p>\n\n\n\n<p>\u201cChai flavors always seem to be popular, and [demand is] growing all the time,\u201d says Budenski.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote\">\n<p>When we make the masala spice mix, we try to create a balance where you can\u2019t detect the individual notes. The whole is more than the sum of its parts.<\/p>\n<cite>Manish shah, maya chai<\/cite><\/blockquote>\n\n\n\n<p>In addition to its lineup of baked goods, Le Buzz Caffe is experimenting with adding chai flavors to various brunch and lunch dishes. \u201cWe\u2019re looking at developing some appetizers and using chai ingredients where it makes sense, such as on roasted vegetables like butternut squash for empanadas,\u201d says Hadley.&nbsp;<\/p>\n\n\n\n<p>Dann noted that many of his chai concentrate clientele are restaurants and other food-related businesses. \u201cI have Indian restaurants and bakeries that order chai concentrate as an ingredient,\u201d he says. \u201cYou see a major spike in these sales around wintertime.\u201d<\/p>\n\n\n\n<p>Similarly, Kitt\u2019s Kitchen &amp; Coffee has leveraged the chai concentrate in many baked goods, including a <a href=\"https:\/\/www.facebook.com\/kittskitchenandcoffee\/photos\/a.1115662755234340\/1221173911349890\/\">Maya Chai bundt cake<\/a>, chai spice scones, and muffins.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-large\"><img decoding=\"async\" width=\"768\" height=\"1024\" src=\"https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/PXL_20230310_174455927-768x1024.jpg\" alt=\"\" class=\"wp-image-34908\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/PXL_20230310_174455927-768x1024.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/PXL_20230310_174455927-375x500.jpg 375w, https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/PXL_20230310_174455927-1152x1536.jpg 1152w, https:\/\/freshcup.com\/wp-content\/uploads\/2023\/04\/PXL_20230310_174455927-400x533.jpg 400w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/figure>\n\n\n\n<p>In speaking about chai&#8217;s versatility in the kitchen, Hadley says, &#8220;chai is one of those ingredients that can change the whole aspect of something in whatever the [food] product is. It&#8217;s easy to add a chai concentrate, taste the combinations, and adjust it.&#8221;&nbsp;&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Staying Ahead of the Trend<\/h2>\n\n\n\n<p>Much like the coffee industry, the tea industry\u2019s consumers are always on the hunt for the next <a href=\"https:\/\/www.specialityfoodmagazine.com\/food-and-drink\/2023s-consumers-tea-time\">trend<\/a>. The <a href=\"https:\/\/freshcup.com\/reflecting-on-the-evolution-of-chai-in-coffeeshops\/\">use of chai <\/a>continues to evolve to meet demand, and Dann predicts we\u2019ll continue to see new ways to consume chai, \u201cWe\u2019re going to start seeing more chai products available in grocery stores, including canned RTD (ready to drink) beverages.\u201d<\/p>\n\n\n\n<p>To stay ahead of tea trends, coffee shops such as Le Buzz Caffe are constantly experimenting with new ways to include the complex flavors of chai with the simplicity of a concentrate like those offered by Maya Tea. \u201cOur customer\u2019s desire for chai tea has grown with the whole boom in coffee,\u201d says Hadley.<\/p>\n\n\n\n<p>Chai concentrates, such as those available from Maya Tea, open the door for endless creative beverages and culinary options that honor chai flavors and tradition.
