The supply chain is convoluted and opaque, resulting in farmers getting lost in the shuffle, which has real financial ramifications for the people who grow your coffee. Of the $200 billion generated by the global coffee industry in 2015, <a href=\"https:\/\/static1.squarespace.com\/static\/584f6bbef5e23149e5522201\/t\/5f22985fd634f84394b826ea\/1596102763860\/A+Business+Case+to+Increase+Consumption+-+English+-+July+2020.pdf\">exporting countries only retained $19.2 billion<\/a>. That means that the nations\u2014and people\u2014who grow coffee keep just 10% of the value it generates.<\/p>\n\n\n\n<p>But some cafes are turning towards a more vertically integrated formula, opening the door for deeper relationships with farmers and more equitably sharing coffee\u2019s value. &nbsp; <strong>&nbsp;&nbsp;&nbsp;<\/strong><\/p>\n\n\n\n<p>To ensure they wouldn\u2019t get lost along the way, one family-run coffee farm in Honduras decided to step into the retail game in the United States. After opening a few successful shops in Honduras, <a href=\"https:\/\/cafetanopgh.com\/\">Cafetano Coffee Roasters<\/a> replicated their model in Pittsburgh, offering patrons coffee directly from their farms and giving the city a taste of their home.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>All In The Family<\/strong><\/h3>\n\n\n\n<p>For Mirko Cuculiza, coffee has always been a family affair. Cuculiza comes from a long line of coffee growers: he grew up on a farm in Honduras and learned the family business from his father. The family has been growing coffee since 1976, but Cuculiza was eager to learn more. <\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-large\"><img decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/IMG_8698-1024x683.jpg\" alt=\"\" class=\"wp-image-32142\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/IMG_8698-1024x683.jpg 1024w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/IMG_8698-500x333.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/IMG_8698-768x512.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/IMG_8698-1080x720.jpg 1080w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/IMG_8698-610x407.jpg 610w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/IMG_8698-200x133.jpg 200w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/figure>\n\n\n\n<p>He combined his decades of first-hand knowledge with new ideas and techniques, studying coffee more intently by taking classes with the Specialty Coffee Association (<a href=\"https:\/\/sca.coffee\/\">SCA<\/a>) and receiving a cupping certification from the Honduran Coffee Institute (<a href=\"https:\/\/www.ihcafe.hn\/\">IHCAFE<\/a>). In 2015, he opened the first of what would be five Cafetano Coffee locations within Honduras.<\/p>\n\n\n\n<p>As their family brand grew, they began to export their beans globally to countries like Japan, Australia, and Norway. Then, a Pennsylvania businessman stumbled upon a Cafetano location in Tegucigalpa, Honduras, changing the trajectory of the business.<\/p>\n\n\n\n<p>Carl Allison immediately saw potential in Cafetano\u2014and wanted to bring the model back home with him to western Pennsylvania. Allison initially imagined opening up in Pittsburgh\u2019s Strip District neighborhood: an area once home to warehouses adjacent to the downtown district. The Strip District now houses businesses like gourmet shops, grocers, and eateries. The Strip District is only a half square mile but is known to locals and visitors as the city\u2019s multicultural culinary haven.&nbsp;<\/p>\n\n\n\n<p>Cuculiza was impressed. \u201cThe neighborhood is so full of culture we knew the cafe could find a home here and thrive,\u201d Cuculiza says. \u201cWe take pride in the fact that the cafe is located in such a diverse area of the city.\u201d&nbsp;&nbsp;&nbsp;&nbsp;<\/p>\n\n\n\n<p>Initially, Cuculiza\u2019s family wasn\u2019t sure what to think of Allison\u2019s interest in Cafetano. \u201cMy father thought at first his call was a joke,\u201d Cuculiza explained. But soon, they began taking Allison\u2019s proposal more seriously, and Cuculiza asked his daughter Lorella\u2014already living in the US\u2014 to move to Pittsburgh to spearhead the project. Soon, Allison and Cuculiza opened the first Cafetano in North America in October 2021.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Vertical Integration<\/strong><\/h3>\n\n\n\n<p>The model at Cafetano\u2019s Pittsburgh location is simple: they ship unroasted beans from Honduras to the shop and roast everything in-house. You\u2019ll find coffees like La Guara, a gesha varietal named after the national bird of Honduras with notes of bergamot and mandarin orange. Their vertical supply chain is integral to keeping cohesion between their cafes both domestically and abroad.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-large\"><img decoding=\"async\" width=\"1000\" height=\"1024\" src=\"https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/014E3555-6485-44BC-82C6-DCC9FA63B446_1_201_a-1000x1024.jpeg\" alt=\"\" class=\"wp-image-32143\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/014E3555-6485-44BC-82C6-DCC9FA63B446_1_201_a-1000x1024.jpeg 1000w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/014E3555-6485-44BC-82C6-DCC9FA63B446_1_201_a-488x500.jpeg 488w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/014E3555-6485-44BC-82C6-DCC9FA63B446_1_201_a-768x786.jpeg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/014E3555-6485-44BC-82C6-DCC9FA63B446_1_201_a-610x624.jpeg 610w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/014E3555-6485-44BC-82C6-DCC9FA63B446_1_201_a-200x205.jpeg 200w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/014E3555-6485-44BC-82C6-DCC9FA63B446_1_201_a.jpeg 1016w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/figure>\n\n\n\n<p>Cafetano isn\u2019t the only coffee shop keeping farmers at the forefront of the process by implementing a vertically integrated business model. In 2012, <a href=\"https:\/\/www.cafeintegral.com\/\">Caf\u00e9 Integral<\/a> opened its first location in New York City, a vertically-integrated caf\u00e9 approaching coffee from a philosophy that \u201cstems from the grower\u2019s perspective and ushers the coffee through from shrub husbandry to perfect brew,\u201d according to their website.&nbsp;<\/p>\n\n\n\n<p>Along with its location in New York, Integral has expanded to Washington DC and Los Angeles, showing drinkers that quality comes from more than the bean itself. In a recent interview with <a href=\"https:\/\/vinepair.com\/articles\/nicaraguan-coffee-cafe-integral-wine\/\">Vinepair<\/a>, Caf\u00e9 Integral founder Cesar Vega noted that the coffee industry impacts over 400,000 families in Nicaragua, and his idea is \u201cto take as much as I can find a home for [it]. What we always wanted to do is put the producer first, pay them great prices, that\u2019s how you create sustainability\u2026as much as we can, we try to buy every last bean that the producer makes.\u201d&nbsp;<\/p>\n\n\n\n<p>Putting the producer first is a concept that <a href=\"https:\/\/www.devocion.com\/\">Devocion<\/a> has also been doing since 2006. Their New York City locations work directly with Colombian growers\u2014beans go from growing on plants to your cup within 45 days. Their practices aim to be \u201cexcellent for our customers, a fair price for our producers, and the protection of our coffee landscape,\u201d <a href=\"https:\/\/www.devocion.com\/blogs\/medium-feed\/sustainability-program-2026\">their website explains<\/a>.<\/p>\n\n\n\n<p>Cuculiza\u2019s Pittsburgh caf\u00e9 is no different. The coffee served in both Pittsburgh and Honduras are arabica beans grown on their family farm, sometimes supplemented by beans from neighboring farms. According to Cuculiza, \u201cevery coffee variety is cupped at our Cafetano Las Minitas [location in Honduras] and held to a quality standard before being purchased and sold.\u201d The supplemental beans are a way for Cuculiza to purchase directly from local producers, so the value stays within local families in the community. Cuculiza shared that without their contracts, the beans could go to international coffee companies who may offer less for the product and water down the market.&nbsp;<\/p>\n\n\n\n<p>\u201cCoffee farming is a small, close community,\u201d says Cuculiza. \u201cWe go straight to the source to ensure the money is going back to the people growing the product we are all consuming.\u201d&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Cultural Icons<\/strong><\/h3>\n\n\n\n<p>When opening the Cafetano location in Pittsburgh, Cuculiza was adamant about spotlighting Honduran culture. It was important for the family that the new site would showcase where their coffee comes from to educate their consumers.&nbsp;&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image alignleft size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/E6D574F8-89B9-45CD-A878-5E2153322732_1_201_a-768x1024.jpg\" alt=\"\" class=\"wp-image-32144\" width=\"338\" height=\"450\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/E6D574F8-89B9-45CD-A878-5E2153322732_1_201_a-768x1024.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/E6D574F8-89B9-45CD-A878-5E2153322732_1_201_a-375x500.jpg 375w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/E6D574F8-89B9-45CD-A878-5E2153322732_1_201_a-1152x1536.jpg 1152w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/E6D574F8-89B9-45CD-A878-5E2153322732_1_201_a-1080x1440.jpg 1080w, https:\/\/freshcup.com\/wp-content\/uploads\/2022\/09\/E6D574F8-89B9-45CD-A878-5E2153322732_1_201_a-610x813.jpg 610w\" sizes=\"(max-width: 338px) 100vw, 338px\" \/><\/figure>\n\n\n\n<p>\u201cIt\u2019s a sense of pride,\u201d Cuculiza says, \u201cas well as a way for us to share with our customers more about where the coffee in your cup comes from.\u201d<\/p>\n\n\n\n<p>Cafetano\u2019s love of culture and country shines through even the small details of their coffee. Cafetano Pittsburgh incorporates brightly colored artwork by Honduran artists in the space and highlights foods made with Honduran ingredients on their menu as a way to connect their businesses. Customers appreciate the care and effort: Cucliza attributes their success in the US to their authenticity and attention to detail.&nbsp;<\/p>\n\n\n\n<p>Cafetano is also committed to quality. The cafe offers coffees prepared on a wide range of brewing devices, from AeroPress to French press, Chemex to Japanese-style pour-over methods. \u201cAbout 15% of our customers buy filtered methods like the Chemex, v60, [and] Aeropress,\u201d says Cuculiza.&nbsp;<\/p>\n\n\n\n<p>For Allison and Cuculiza, the introduction of Cafetano to the US market has been highly successful. In the future, they hope to expand and that their Pittsburgh Strip District location will serve as their \u201cflagship store,\u201d Cuculiza says, with plans to \u201copen other cafes in the area or think bigger.\u201d&nbsp;<\/p>\n\n\n\n<p>Cafetano balances a lot: they\u2019re working to bring more value to coffee farmers in Honduras while highlighting the beauty of Honduran coffee domestically and abroad.
