The chemical in question is acrylamide, created during the Maillard reaction, and is also found in French fries, potato chips, and baked goods. While high levels of acrylamide are definitively carcinogenic, it\u2019s unclear as to whether the trace amounts found in roasted coffee beans, which are then extracted into liquid, are harmful.<\/p>\n<p>While there\u2019s an ongoing effort through California\u2019s Office of Environmental Health Hazard Assessment to <a href=\"https:\/\/oehha.ca.gov\/proposition-65\/crnr\/proposed-adoption-new-section-under-article-7-no-significant-risk-levels-section#_ftn\" target=\"_blank\" rel=\"noopener noreferrer\">reverse that ruling<\/a>, a European biotech firm has another solution: reduce the acrylamide in coffee. Since 2007, <a href=\"https:\/\/www.novozymes.com\/en\/advance-your-business\/food-and-beverage\/veg-apps\/acrylaway\/coffee\" target=\"_blank\" rel=\"noopener noreferrer\">Novozymes<\/a> has produced an enzyme that reduces the presence of acrylamide in certain foods throughout Europe. The enzyme, known commercially as Acrylaway, means that food\u2019s natural amino acids can\u2019t be converted into acrylamide during the cooking process. In a recent interview with <a href=\"https:\/\/www.businessinsider.com\/cancer-risk-coffee-acrylamide-2019-2\" target=\"_blank\" rel=\"noopener noreferrer\"><em>Business Insider<\/em><\/a>,&nbsp; Novozymes CEO Peder Holk Nielsen claims that using his product could even result in better-tasting coffee by reducing bitterness.
