{"id":17492,"date":"2022-10-04T06:00:00","date_gmt":"2022-10-04T11:00:00","guid":{"rendered":"http:\/\/freshcup.com\/?p=17492"},"modified":"2022-09-22T21:22:00","modified_gmt":"2022-09-23T02:22:00","slug":"make-it-sparkle","status":"publish","type":"post","link":"https:\/\/freshcup.com\/make-it-sparkle\/","title":{"rendered":"Everyone Likes Bubbles: How To Incorporate Carbonated and Sparkling Drinks On Your Menu"},"content":{"rendered":"<p><span data-preserver-spaces=\"true\">At Seattle\u2019s\u00a0<\/span><a class=\"editor-rtfLink\" href=\"http:\/\/www.ghostnotecoffee.com\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">Ghost Note Coffee<\/span><\/a><span data-preserver-spaces=\"true\">, 90 percent of the photos customers share online feature signature drinks with sparkling or tonic water. \u201cWe weren\u2019t expecting our signature drinks to take off and define us as much as they do,\u201d says Christos Andrews, co-owner and coffee\/beverage director at Ghost Note. \u201cOur signature drinks became, \u2018Oh, this is the coffee shop that makes those crazy cocktail drinks.\u2019\u201d<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">Sparkling, fizzy, and bubbly drinks\u2014be they beverages made with actual sparkling water or carbonated with a keg or nitro system\u2014are incredibly popular, but they\u2019re not always simple to make. Special equipment and ingredients are often needed, as well as an understanding of the processes behind creating sparkling drinks, whether at the foundational level of recipe creation or at a more niche level of cleaning kegerator equipment. But when planned well and incorporated into a cafe menu, sparkling drinks can capture the attention of potential customers no matter the season.\u00a0<\/span><\/p>\n<h1><span data-preserver-spaces=\"true\">Sparkling Ahead Of The Crowd<\/span><\/h1>\n<p><span data-preserver-spaces=\"true\">For some shops, the complexity of sparkling drinks is part of the allure. \u201cIt\u2019s that fun challenge of creating something that hasn\u2019t been done before,\u201d says Jeremy Behne, director of coffee at\u00a0<\/span><a class=\"editor-rtfLink\" href=\"http:\/\/www.42lawrence.com\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">42 &amp; Lawrence<\/span><\/a><span data-preserver-spaces=\"true\">, a coffee lab created by\u00a0<\/span><a class=\"editor-rtfLink\" href=\"https:\/\/larryscoffee.com\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">Larry\u2019s Coffee<\/span><\/a><span data-preserver-spaces=\"true\">\u00a0in Raleigh, North Carolina.\u00a0<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">Behne loves using sparkling water to complement the flavors in coffee. \u201cWe have all these great tasting notes in these great coffees, so how can you complement them without milk? The second you get a group of baristas excited about creating something like that, you\u2019ll get things coming out of your shop that you would\u2019ve never thought of.\u201d<\/span><\/p>\n<figure id=\"attachment_17506\" aria-describedby=\"caption-attachment-17506\" style=\"width: 1000px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-17506 size-full\" src=\"https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/ides-of-march.jpg\" alt=\"\" width=\"1000\" height=\"667\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/ides-of-march.jpg 1000w, https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/ides-of-march-500x334.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/ides-of-march-768x512.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/ides-of-march-200x133.jpg 200w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><figcaption id=\"caption-attachment-17506\" class=\"wp-caption-text\">\u00a0<\/figcaption><\/figure>\n<p><span data-preserver-spaces=\"true\">Often, rising to that creative challenge requires commitment. Ghost Note\u2019s Andrews spent four months perfecting a drink called the Sun Ship, made with espresso, smoked grapefruit rosemary syrup, coconut water, sparkling water, and lime.\u00a0<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">But his persistence paid off\u2014fizzy drinks are what set Ghost Note apart from other cafes in the neighborhood. \u201cCustomers can find a good mocha or cappuccino at a million different coffee shops, but there\u2019s only one place they can get a Sun Ship,\u201d he says.<\/span><\/p>\n<h1><span data-preserver-spaces=\"true\">Sparkling Persistence<\/span><\/h1>\n<p><span data-preserver-spaces=\"true\">Erica Swanson, CEO and founder of\u00a0<\/span><a class=\"editor-rtfLink\" href=\"https:\/\/www.drinkteabar.com\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">Tea Bar<\/span><\/a><span data-preserver-spaces=\"true\">\u00a0in Portland, Oregon, is tenacious. It took her more than two years to perfect a chai recipe that became the base of her sparkling cardamom chai, made with fresh green cardamom, cloves, whole peppercorns, cinnamon, raw turbinado sugar, and organic black tea. Swanson has tried to make sparkling matcha, which she says was \u201cthe worst,\u201d though she\u2019d like to figure out how to do it one day.<\/p>\n<p>Recipes must not only be delicious, but they must also be scalable. \u201cIt\u2019s so difficult to make a high-quality chai that you can also mass produce. Making something single-serving is very different than making something for three shops to sell hundreds of a week,\u201d Swanson says.<\/p>\n<p>Having the proper hardware helps. Many caf\u00e9s turn to the beer industry for pointers on how to scale up sparkling and draft drinks. 42 &amp; Lawrence has six taps that push nitrogen and carbon dioxide to produce nitro cold brew, draft lattes, coffee sodas, and more. Before opening, the owners spoke with bartenders and brewers and eventually decided to build their own nitrogenators.<\/p>\n<p><img decoding=\"async\" class=\" wp-image-17499 alignleft\" src=\"https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/Taps-500x334.jpg\" alt=\"\" width=\"350\" height=\"234\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/Taps-500x334.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/Taps-768x512.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/Taps-200x133.jpg 200w, https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/Taps.jpg 1000w\" sizes=\"(max-width: 350px) 100vw, 350px\" \/><\/p>\n<p><span data-preserver-spaces=\"true\">One crucial piece of advice that 42 &amp; Lawrence learned from their research: pure carbonation can\u2019t be added to coffee, unlike beer, as it creates too much acid.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">With taps comes the critical task of keeping lines clean. \u201cA lot of tap lines are hidden, kind of behind-the-scenes work. I can\u2019t see what\u2019s going on, but I have to ensure I\u2019m keeping it as clean as the espresso machine,\u201d says Behne.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">\u201cJust like in a brewery, you need to clean your tips and taps,\u201d says Chris Garrison, owner of\u00a0<\/span><a class=\"editor-rtfLink\" href=\"https:\/\/oldworldcoffee.co\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">Old World Coffee<\/span><\/a><span data-preserver-spaces=\"true\">\u00a0in Reno, Nevada. Garrison recommends under-filling nitro kegs and then shaking them to distribute the nitrogen thoroughly for better frothing.<\/span><\/p>\n<h1><span data-preserver-spaces=\"true\">No Equipment Required\u00a0<\/span><\/h1>\n<p><span data-preserver-spaces=\"true\">A caf\u00e9 doesn\u2019t need taps to create fizzy drinks, however. \u201cIf you have cold brew concentrate and seltzer, that\u2019s all you need to start experimenting,\u201d says Behne.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">There are two main ways most places serve bubbly water: one that requires equipment and one that doesn\u2019t. Ghost Note Coffee uses a vendor for sparkling and tonic water, and Tea Bar has a filtration system installed in each of their shops, which provides in-house access to carbonated water via a soda gun.\u00a0<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">Adding sparkling drinks to a coffee and tea menu involves creativity, persistence, unique ingredients, and even new equipment. Still, there\u2019s a tremendous upside\u2014most people love bubbles, whether soda, kombucha, beer, cocktails, or Champagne.<\/span><\/p>\n<p><img decoding=\"async\" class=\"wp-image-17500 size-full\" src=\"https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/TeaBar_SparklingLemonade.jpg\" alt=\"\" width=\"1000\" height=\"714\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/TeaBar_SparklingLemonade.jpg 1000w, https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/TeaBar_SparklingLemonade-500x357.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/TeaBar_SparklingLemonade-768x548.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2018\/06\/TeaBar_SparklingLemonade-200x143.jpg 200w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/p>\n<p>Swanson points out that many people are looking for creative drinks, and bubbly concoctions fill that role: \u201cMaybe it\u2019s someone who usually drinks soda, but they want something with less sugar and healthier ingredients. And when it\u2019s warmer out, people crave something super-refreshing.\u201d<\/p>\n<p>Besides giving customers something fresh and exciting, carbonated drinks allow caf\u00e9s and baristas to experiment. \u201cFor so long in coffee, we\u2019ve been dictated by the actual harvest season\u2014you get Kenyan coffee when Kenya\u2019s available. Coffee sodas allow us to play with seasonal ingredients that are local to us as well,\u201d says Behne.<\/p>\n<p>42 &amp; Lawrence makes a drink called the \u201cRedheaded Stranger,\u201d a coffee soda with hibiscus, rosehips, and pomegranate. \u201cIt\u2019s about crafting recipes you\u2019re passionate about and doing something creative and amazing that your customers appreciate,\u201d says Swanson. Recently, Ghost Note started working with a local business that makes shrubs, a flavored drinking vinegar. One of their newest drinks, the \u201cRivercane Tonic,\u201d contains espresso, sweet tea syrup, peach\u2013brown sugar shrub, peach bitters, and tonic water.<\/p>\n<p>Old World Coffee offers a simple homage to a gin and tonic\u2014the \u201cCafe Tonix,\u201d made with cold brew concentrate and tonic water.<\/p>\n<p>Sparkling drinks are the perfect way to surprise and delight your customers, whether a creamy draft latte, a refreshing sparkling tea, an inventive coffee soda, or a classic nitro cold brew.
