Thoughtfully tasting the unique flavors of each cheese and coffee is essential in experiencing how tastes and textures transform once the items are combined. A good pairing will create a new flavor experience while still accentuating these initial flavors.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">Caf\u00e9s can introduce pairings to their customers by hosting a pairing event (also a great excuse to forge partnerships with local creameries). These events provide an opportunity for employees to engage with your customers and community and serve as a learning opportunity for everyone involved\u2014all while creating a unique draw for your business.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">In 2017, Denver, Colorado\u2019s\u00a0<\/span><a class=\"editor-rtfLink\" href=\"https:\/\/copperdoorcoffee.com\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">Copper Door Coffee Roasters<\/span><\/a><span data-preserver-spaces=\"true\">\u00a0partnered with local\u00a0<\/span><a class=\"editor-rtfLink\" href=\"http:\/\/www.stkilianscheeseshop.com\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">St. Kilian\u2019s Cheese Shop<\/span><\/a><span data-preserver-spaces=\"true\">\u00a0to curate a tour through three coffee and cheese pairings.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">The cheese and coffee pairing event was an easy choice. Copper Door already had a strong schedule of monthly educational classes, covering everything from dominant flavors in coffee regions, different cold brewing methods, interesting pairings, and a good relationship with St. Kilian\u2019s. But customers were still surprised by the combination, says Copper Door owner Hannah Ulbrich. \u201cMost of the people who came to our class were curious because it was so different. We did three cheeses with coffee prepared in different ways.\u201d<\/span><\/p>\n<p><img decoding=\"async\" class=\"size-full wp-image-14950 aligncenter\" src=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/09\/CoffeeCheese_Chart.jpg\" alt=\"coffee and cheese\" width=\"1286\" height=\"790\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/09\/CoffeeCheese_Chart.jpg 1286w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/09\/CoffeeCheese_Chart-500x307.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/09\/CoffeeCheese_Chart-768x472.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/09\/CoffeeCheese_Chart-1024x629.jpg 1024w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/09\/CoffeeCheese_Chart-1080x663.jpg 1080w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/09\/CoffeeCheese_Chart-310x190.jpg 310w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/09\/CoffeeCheese_Chart-200x123.jpg 200w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/p>\n<p><span data-preserver-spaces=\"true\">The standout pairing of the event was a sheep\u2019s milk blue cheese (Little Boy Blue from\u00a0<\/span><a class=\"editor-rtfLink\" href=\"http:\/\/www.hookscheese.com\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">Hook\u2019s Cheese Company<\/span><\/a><span data-preserver-spaces=\"true\">, Wisconsin), topped with a honey-hazelnut caramel drizzle and paired with Copper Door\u2019s espresso. \u201cIt was funky and so delicious,\u201d Ulbrich says.<\/span><\/p>\n<h2><strong><span data-preserver-spaces=\"true\">Beyond Coffee and Cheese\u00a0<\/span><\/strong><\/h2>\n<p><a class=\"editor-rtfLink\" href=\"http:\/\/royalteany.com\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">Royal Tea New York<\/span><\/a><span data-preserver-spaces=\"true\">\u00a0hosted two cheese pairing events this winter featuring select teas and chocolates in a guided format that encouraged thoughtful tasting and conversation. Royal worked with the\u00a0<\/span><a class=\"editor-rtfLink\" href=\"http:\/\/frenchcheeseboard.com\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">French Cheese Board<\/span><\/a><span data-preserver-spaces=\"true\">\u00a0to create pairings that followed traditional rules\u2014such as balancing astringency with fat\u2014and some that broke the rules a little bit.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">\u201cA lot of the guidelines for pairing like wine work, but some rules are meant to be broken,\u201d says Ravi Kroesen, tea director of Royal Tea New York. \u201cSalty and sweet, and astringency versus fat can work well, provided there isn\u2019t a lot of salt in the cheese.\u201d<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">The standout pairing was a goat cheese with a second flush Darjeeling, which Kroesen describes as creating a \u201cchord shift\u201d\u2014a flavor profile unique to the pairing. Another notable pair? \u201cA Mimolette with the Phoenix Oolong. Mimolette has a high salt and a lot of nuttiness, which paired well with the sweetness of the oolong,\u201d Kroesen says.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">Pairings are meant to be an experience of exploration and discovery. As a business owner, you can choose how much structure you provide to guests. A good place to start? Choose one coffee and focus on finding a selection of cheeses with complementary flavors. Once you\u2019ve built a basic pairing menu, you\u2019ll be ready to let your palate guide you and your customers through all the world of parings has to offer.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">Kroesen reiterates the open-ended nature of tastings\u2014and the benefits they bring: \u201cThere\u2019s no wrong answer. We all have the same equipment, but how it\u2019s interpreted is so subjective in terms of olfactory and taste.\u201d<\/span><\/p>\n<p><em>Cover photo by <a
