Chef and owner Jeff Kraus\u2019s original concept for Cr\u00eape Bar was a culinary-focused food cart, which went brick-and-mortar in 2012 to create a fast-casual restaurant with a higher standard for friendly service and attention to detail. As part of this transformation the coffee bar was added, designed by local barista legend Jason Calhoon. This made Cr\u00eape Bar the city\u2019s only caf\u00e9 specializing in both coffee and food.<\/em><\/p>\n<p><a href=\"http:\/\/www.crepe-bar.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Cr\u00eape Bar<\/a> exclusively serves <a href=\"https:\/\/www.heartroasters.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Heart Coffee Roasters<\/a>\u2014the only shop to do so in Phoenix. They carry the same values as Heart for building relationships with their consumers and farmers, as well as delivering a product with attention to detail. And you won\u2019t just find Heart at the coffee bar pulled through their <a href=\"http:\/\/www.nuovadistribution.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Nuova Simonelli<\/a>\u2014it\u2019s infused into the brunch menu as well, in dishes like the Grand Prix: coffee cr\u00eape, pork belly, espresso maple syrup, cr\u00e8me fra\u00eeche, and an egg. Heart coffee is used in the batter of the cr\u00eape, in the brine for the pork belly, and in the syrup. Kraus explains: \u201cWe take pride in making things from scratch. It\u2019s how it should be, right?\u201d<\/p>\n<p><img decoding=\"async\" class=\"alignleft size-full wp-image-13762\" src=\"http:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/CrepeBar_LatteUpClose.jpg\" alt=\"Phoenix Coffee\" width=\"1014\" height=\"676\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/CrepeBar_LatteUpClose.jpg 1014w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/CrepeBar_LatteUpClose-500x333.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/CrepeBar_LatteUpClose-768x512.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/CrepeBar_LatteUpClose-200x133.jpg 200w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/p>\n<p><strong>Cartel<br \/>\n<\/strong>PAREDES: <em>Cartel had long been one of my favorite places to drink a cappuccino and meet people, so I was excited to join the company as a barista at their location at the Phoenix Sky Harbor International Airport (Terminal 4). The shop became a piece of home to me. Working here, we often heard from customers that they planned their layover in Phoenix so they could stop by for specialty coffee during their travels.<\/em><\/p>\n<p>What started as a trip to a specialty coffee farm in Huehuetenango, Guatemala, in 2007, became the concept of <a href=\"https:\/\/www.cartelcoffeelab.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Cartel Coffee Lab<\/a>: a place to bring quality beverages to Arizona. Co-owners Jason and Amy Silberschlag, and roaster Paul Haworth followed with a trip to Southern California to purchase a used roaster and deliver it to the flagship Tempe location, where it still abides.<\/p>\n<p><img decoding=\"async\" class=\"alignleft size-full wp-image-13758\" src=\"http:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Cartel_FullStoreArea.jpg\" alt=\"Phoenix Coffee\" width=\"1014\" height=\"676\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Cartel_FullStoreArea.jpg 1014w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Cartel_FullStoreArea-500x333.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Cartel_FullStoreArea-768x512.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Cartel_FullStoreArea-200x133.jpg 200w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/p>\n<p>The Silberschlags were both experienced baristas and in 2009, Jason placed second in the Southwest Regional <a href=\"http:\/\/www.uscoffeechampionships.org\/barista-championship\/\" target=\"_blank\" rel=\"noopener noreferrer\">Barista Championship<\/a>. The vision for Cartel grew: to establish the company\u2019s place on the national specialty coffee map, and to become a trusted source for high-quality roasted coffee.<\/p>\n<p>Cartel now operates six locations in Arizona. The Phoenix Airport shop opened in 2012, marking one of the first independently owned specialty shops in an airport. The shop only opened after agreeing it would be staffed by their own baristas, and not by a third party agency. Like all their locations, the store offers customers an espresso, tea, and filter coffee menu (fueled by a <a href=\"https:\/\/www.fetco.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Fetco<\/a> batch brewer and backed by a slow bar comprised of <a href=\"https:\/\/aerobie.com\/product\/aeropress\/\" target=\"_blank\" rel=\"noopener noreferrer\">Aeropress<\/a>, <a href=\"http:\/\/www.hario.jp\/seihin\/productlist.php?bigclass=1\" target=\"_blank\" rel=\"noopener noreferrer\">V60<\/a>, and <a href=\"http:\/\/www.chemexcoffeemaker.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Chemex<\/a>).<\/p>\n<p><img decoding=\"async\" class=\"alignleft size-full wp-image-13759\" src=\"http:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Cartel_PopTarts.jpg\" alt=\"Phoenix Coffee\" width=\"1014\" height=\"676\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Cartel_PopTarts.jpg 1014w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Cartel_PopTarts-500x333.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Cartel_PopTarts-768x512.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Cartel_PopTarts-200x133.jpg 200w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/p>\n<p>From the planning stages of Cartel through today, the partnerships with specialty coffee farms are highlighted in Cartel\u2019s direct-from-source offerings: beans sourced from friendships built over meals shared with farmers in Central and South America.<\/p>\n<p><strong>FUTURO<\/strong><br \/>\nPAREDES:<em> Futuro opened in 2016, toward the end of my time as a Phoenician. It was where I\u2019d run into friends, or a local barista grabbing coffee on their day off. Cascara con Topo Chico, anyone?<\/figcaption><\/figure>\n<p>Coffee has always been on my mind,\u201d says <a href=\"https:\/\/www.instagram.com\/futurocoffee\/?hl=en\" target=\"_blank\" rel=\"noopener noreferrer\">Futuro<\/a> owner Jorge Ignacio Torres. \u201cTo me it was about being able to present everything that I loved under one roof. It started with hair, then art, and then music. I didn\u2019t have any coffee experience beforehand other than loving the product.\u201d<\/p>\n<p>Futuro sits inside a creative space known as <a href=\"http:\/\/palabraphx.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Palabra<\/a> in the Phoenix Roosevelt Art District, which houses a salon and art gallery in addition to the coffee bar. The gallery showcases a rotation of art from local artists; the space itself is the collective genius of Chuckie Duff, local architect <a href=\"http:\/\/archinect.com\/people\/cover\/15777587\/artie-vigil\" target=\"_blank\" rel=\"noopener noreferrer\">Artie Vigil<\/a>, and lead contractor Rob Withem.<\/p>\n<p>&nbsp;<\/p>\n<figure id=\"attachment_13764\" aria-describedby=\"caption-attachment-13764\" style=\"width: 1014px\" class=\"wp-caption alignleft\"><img decoding=\"async\" class=\"size-full wp-image-13764\" src=\"http:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/futuro_Customer.jpg\" alt=\"Phoenix Coffee\" width=\"1014\" height=\"676\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/futuro_Customer.jpg 1014w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/futuro_Customer-500x333.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/futuro_Customer-768x512.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/futuro_Customer-200x133.jpg 200w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><figcaption id=\"caption-attachment-13764\" class=\"wp-caption-text\">Jenson Metcalf is a barista at Cartel Coffee Lab and a customer at Futuro.<\/figcaption><\/figure>\n<p>Futuro is not for those \u201clooking for artificial flavoring and comfy couches,\u201d Torres explains. He designed the menu \u201cwith beverages that pay homage to the true flavors of the bean itself. You\u2019re able to taste and appreciate those flavors of the earth the beans grow from\u2014it\u2019s like wine.\u201d<\/p>\n<p>Torres collaborated with <a href=\"http:\/\/www.phoenixnewtimes.com\/restaurants\/phoenix-barista-harlin-glovacki-qualifies-for-us-barista-championship-6517200\" target=\"_blank\" rel=\"noopener noreferrer\">Harlin Glovacki<\/a> and <a href=\"http:\/\/www.phoenixnewtimes.com\/restaurants\/bill-kennedy-of-futuro-on-serving-great-coffee-in-downtown-phoenix-8089909\" target=\"_blank\" rel=\"noopener noreferrer\">William Kennedy<\/a> for equipment selection, including a <a href=\"http:\/\/www.lamarzoccousa.com\/portfolio\/linea\/\" target=\"_blank\" rel=\"noopener noreferrer\">La Marzocco Linea 2<\/a>, Mahlk\u00f6nig <a href=\"http:\/\/www.mahlkoenig.com\/us_products\/K30-Vario-Single-Espresso-Grinder-USBC-.html\" target=\"_blank\" rel=\"noopener noreferrer\">K30<\/a>, and Mahlk\u00f6nig <a href=\"http:\/\/www.mahlkoenig.com\/us_products\/EK-43-WBC-USBC-.html\" target=\"_blank\" rel=\"noopener noreferrer\">EK 43<\/a>. The bar features coffee from Vancouver, British Columbia\u2019s <a href=\"https:\/\/49thcoffee.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">49th Parallel<\/a>, in a drink menu presented in Spanish\u2014a small detail where Torres can show respect to his culture and mother.<\/p>\n<p><img decoding=\"async\" class=\"alignleft size-full wp-image-13765\" src=\"http:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/futuro_OneOne.jpg\" alt=\"Phoenix Coffee\" width=\"1014\" height=\"676\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/futuro_OneOne.jpg 1014w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/futuro_OneOne-500x333.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/futuro_OneOne-768x512.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/futuro_OneOne-200x133.jpg 200w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/p>\n<p>The whole space is meant to be an experience: from the architecture, to the coffee and art, to the weekly curated music playlist. Torres carefully selected every detail, down to the milk and ceramics, the artisan toast by <a href=\"https:\/\/www.instagram.com\/heftbread\/\" target=\"_blank\" rel=\"noopener noreferrer\">Heft Co.<\/a>\u2014 topped with preserves from <a href=\"http:\/\/sqirlla.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Sqirl<\/a>\u2014and the pastries from <a href=\"https:\/\/ledinersaur.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">leDinersaur<\/a>. Provision makes these relationships personal, so they can better address specific needs, such as cows for the farmers in Burundi, and scholarships for the children of their farmers in Guatemala.<\/p>\n<p>As roasters, the team at Provision develops their roasts just enough to highlight the notes of chocolate that balance the beans\u2019 natural fruit acidity.<\/p>\n<figure id=\"attachment_13769\" aria-describedby=\"caption-attachment-13769\" style=\"width: 1014px\" class=\"wp-caption alignleft\"><img decoding=\"async\" class=\"wp-image-13769 size-full\" src=\"http:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Provision_BarAreaPAtrons.jpg\" alt=\"Phoenix Coffee\" width=\"1014\" height=\"676\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Provision_BarAreaPAtrons.jpg 1014w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Provision_BarAreaPAtrons-500x333.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Provision_BarAreaPAtrons-768x512.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/06\/Provision_BarAreaPAtrons-200x133.jpg 200w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><figcaption id=\"caption-attachment-13769\" class=\"wp-caption-text\">Lawrency Jarvey (left) and Daniel Suh (right) mingle with patrons from behind the bar.<\/figcaption><\/figure>\n<p>The bar is staffed by baristas who complete an extensive training program based on SCA standards, using top-quality equipment, such as a <a href=\"https:\/\/home.lamarzoccousa.com\/gs3\/\" target=\"_blank\" rel=\"noopener noreferrer\">La Marzocco GS3<\/a> (soon to be upgraded to a two-group <a href=\"http:\/\/www.lamarzoccousa.com\/portfolio\/linea\/\" target=\"_blank\" rel=\"noopener noreferrer\">Linea Classic AV<\/a>), alongside a Mahlk\u00f6nig Guatemala and K30 grinders, and a <a href=\"https:\/\/www.baratza.com\/grinder\/vario-w\/\" target=\"_blank\" rel=\"noopener noreferrer\">Baratza Vario-W<\/a> grinder for a <a href=\"http:\/\/www.wilburcurtis.com\/microsite\/goldcupbrewer\/\" target=\"_blank\" rel=\"noopener noreferrer\">Curtis Gold Cup brewer<\/a>. On the menu, accompanying traditional coffee beverages, you\u2019ll find signature coffee drinks inspired by classic cocktail recipes, including aromatic bitters and garnishes, and both nitro cold-brew coffee and sparkling white tea on tap.
