{"id":12763,"date":"2022-09-27T06:00:00","date_gmt":"2022-09-27T11:00:00","guid":{"rendered":"http:\/\/freshcup.com\/?p=12763"},"modified":"2022-09-22T20:17:18","modified_gmt":"2022-09-23T01:17:18","slug":"new-wave-tampers","status":"publish","type":"post","link":"https:\/\/freshcup.com\/new-wave-tampers\/","title":{"rendered":"Please Push No More: New Wave Tampers"},"content":{"rendered":"<p><span data-preserver-spaces=\"true\">Pete Southern realized his invention had potential when his website crashed.&nbsp;<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">The United Kingdom\u2019s barista champion Maxwell Colonna-Dashwood was using a prototype of his PUSH tamper at the 2015&nbsp;<\/span><a class=\"editor-rtfLink\" href=\"http:\/\/www.worldbaristachampionship.org\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">World Barista Championship<\/span><\/a><span data-preserver-spaces=\"true\">&nbsp;in Seattle, Washington, and Southern had flown from England to watch.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">\u201cI was just sitting there really nervous that something might go wrong,\u201d Southern says. \u201cThere was a noise in the audience when he picked it up. Everybody was whispering, \u2018what is that?\u2019\u201d<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">The oddly shaped tamper did not escape the notice of Livestream viewers either. When Southern posted a link to his website in the chat bar, a flood of traffic crashed his website. Two years later, Southern\u2019s company,&nbsp;<\/span><a class=\"editor-rtfLink\" href=\"https:\/\/clockworkespresso.com\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">Clockwork Espresso<\/span><\/a><span data-preserver-spaces=\"true\">, is still struggling to meet the demand for their PUSH Tamper.<\/span><\/p>\n<p><img decoding=\"async\" class=\"wp-image-12767 aligncenter\" src=\"http:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUSH_with-tamper.jpg\" alt=\"New Wave Tampers\" width=\"442\" height=\"442\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUSH_with-tamper.jpg 593w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUSH_with-tamper-150x150.jpg 150w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUSH_with-tamper-500x500.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUSH_with-tamper-200x200.jpg 200w\" sizes=\"(max-width: 442px) 100vw, 442px\" \/><\/p>\n<p><span data-preserver-spaces=\"true\">\u201cI didn\u2019t decide \u2018I\u2019m going to invent an awesome tamper,\u2019\u201d Southern says. On the contrary, he was merely trying to solve a problem.<\/span><\/p>\n<h3><span data-preserver-spaces=\"true\">Pushing Down Inconsistencies<\/span><\/h3>\n<p><span data-preserver-spaces=\"true\">As any self-aware barista already knows, tamping properly is hard. All coffee experts agree: a level tamp is necessary to have an evenly extracted espresso, but executing a perfectly level tamp with a conventional tamper is easier said than done. Throw in the pressure of a busy caf\u00e9 environment, and even the best caf\u00e9s will experience inconsistent extractions from shot to shot.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">Southern\u2019s PUSH tamper is perhaps most profound for its simplicity. Rather than the handle found on a conventional tamper, the PUSH tamper is flat on top, allowing the barista to apply pressure with the palm of their hand. An outer ring adjusts to the portafilter\u2019s circumference, ensuring a perfectly level tamp with every use. The result is a remarkably consistent tamp that has won over competitive baristas and caf\u00e9 owners alike.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">The idea for the PUSH tamper came after Southern tried to teach his coworkers how to use the office espresso machine. Despite the lesson, his coworkers still preferred the coffees he made them. \u201cIt came down to the tamping,\u201d says Southern. \u201cThey couldn\u2019t get the hang of it, and they weren\u2019t going to spend hours trying to perfect their tamp.\u201d<\/span><\/p>\n<p><img decoding=\"async\" class=\"wp-image-12766 aligncenter\" src=\"http:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUSH_highblue.jpg\" alt=\"New Wave Tampers\" width=\"436\" height=\"330\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUSH_highblue.jpg 1014w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUSH_highblue-500x379.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUSH_highblue-768x582.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUSH_highblue-200x151.jpg 200w\" sizes=\"(max-width: 436px) 100vw, 436px\" \/><\/p>\n<p><span data-preserver-spaces=\"true\">After a few failed attempts at making a better tamper, Southern realized an adjustable guard would ensure a level tamp and remove the need for a handle. He used his office\u2019s 3-D printer to make the prototype. \u201cI was playing with this 3-D-printed tamper, and I thought, \u2018This is pretty cool. I would buy this.\u2019 If I would buy this, surely someone else would,\u201d Southern says.&nbsp;<\/span><\/p>\n<h2><span data-preserver-spaces=\"true\">Controlling Variables<\/span><\/h2>\n<p><span data-preserver-spaces=\"true\">The wide array of similar products that other tamper manufacturers have released would certainly suggest Southern is not the only one who feels that way. But the demand for a more user-friendly tamper prompts another question: should baristas be trusted to tamp the espresso in the first place?&nbsp;<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">Dutch start-up&nbsp;<\/span><a class=\"editor-rtfLink\" href=\"http:\/\/www.puqpress.com\/\" target=\"_blank\" rel=\"noopener\"><span data-preserver-spaces=\"true\">Puqpress<\/span><\/a><span data-preserver-spaces=\"true\">&nbsp;takes tamping out of the barista\u2019s hands and automates it with their M1 and Q1 automatic tampers. These devices can be programmed to tamp to exact specifications in one-pound increments.<\/span><\/p>\n<p><span data-preserver-spaces=\"true\">\u201cWe do not claim that Puqpress will tamp better than a skilled barista if you compare them one-on-one,\u201d says Tjeerd Schravendeel, Puqpress\u2019s director of business development. \u201cOur position is that no barista can deliver the same tamp repeatedly, say, a hundred times.\u201d According to Schravendeel, the Puqpress helps with consistency from shot to shot and barista to barista as well.<\/span><\/p>\n<p><img decoding=\"async\" class=\"wp-image-12765 aligncenter\" src=\"http:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUQpress_ALL.jpg\" alt=\"New Wave Tampers\" width=\"440\" height=\"499\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUQpress_ALL.jpg 1014w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUQpress_ALL-441x500.jpg 441w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUQpress_ALL-768x871.jpg 768w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUQpress_ALL-903x1024.jpg 903w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUQpress_ALL-200x227.jpg 200w\" sizes=\"(max-width: 440px) 100vw, 440px\" \/><\/p>\n<p>\u201cAs long as there are multiple baristas covering shifts, tamping will always be a variable,\u201d he says. \u201cPuqpress has a maximum tamping force variation of 1 percent, meaning that every tamp will be the same, regardless of the barista behind the machine.\u201d<\/p>\n<p>Much like the renewed popularity of volumetric espresso machines and batch brewers, the rise of more user-friendly and automated tampers reflects a specialty coffee industry embracing the consistency of automation over the singularity of hand-crafted processes. But will some find this new wave of tampers to be a bridge too far? Tamping is one of several highly tuned skills the best baristas spend years developing. Does automating tamping devalue the role of the barista?<\/p>\n<p>Southern disagrees his tamper makes the barista any less critical, but he understands the sentiment. \u201cTamping is not easy to learn, and baristas feel quite proud when they get good at it,\u201d he says. \u201cWe\u2019re humans, and we make mistakes, and we\u2019re more likely to make mistakes the busier we are.\u201d<\/p>\n<p>Besides, unlike a skill like latte art, tamping is not a way for baristas to express their personality. \u201cTamping is either right or wrong,\u201d says Southern. \u201cWhen you start, it\u2019s almost always wrong.\u201d<\/p>\n<p><img decoding=\"async\" class=\"wp-image-12764  aligncenter\" src=\"http:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUQ_above-e1492538191915.jpg\" alt=\"New Wave Tampers\" width=\"444\" height=\"358\" srcset=\"https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUQ_above-e1492538191915.jpg 707w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUQ_above-e1492538191915-500x403.jpg 500w, https:\/\/freshcup.com\/wp-content\/uploads\/2017\/04\/PUQ_above-e1492538191915-200x161.jpg 200w\" sizes=\"(max-width: 444px) 100vw, 444px\" \/><\/p>\n<p>Schravendeel agrees. \u201cIn our opinion, it\u2019s beneficial for everyone if a barista can put more time and energy into his or her customer and in controlling the variables of their espresso shots,\u201d he says.
